BUT!!!! Sooooo good!
These vegan ‘sausage’ is good to eat as is or as ‘hotdog’, shape into nuggets
If you want lighter result, use white button mushrooms instead portobello and white/yellow/regular onion.
1 medium size purple onion, sliced
3 portobello mushrooms, sliced
1-2 tbsp olive oil
3 garlic, crushed
Heat oil saute onion garlic and mushrooms til soften then process into paste
In a bowl, mix:
1 block firm Tofu, crumbled finely
1 tbsp nutritional yeast
3 tbsp pizza sauce or tomato paste
1 tbsp BBQ sauce
Vegeta powder to taste
1 tbsp olive oil
2 1/2 tsp paprika powder (smoked is best)
1 1/2 tsp salt
2 tsp lemon juice
Preheat oven to 390 F
Mix in mushroom paste into the bowl
Stir in 150 g breadcrumbs and 110 g chickpea flour (add more breadcrumbs and flour if mixture is too moist)
Shape into sausage but not too fat/thick
Bake for 20 mins
Serve in hotdog buns with roasted pumpkin chili (recipes a couple posts down) and your fav. Sauce

Ingredients
- 1 medium size purple onion sliced
- 3 portobello mushrooms sliced
- 1-2 tbsp olive oil
- 3 garlic crushed
- 1 block firm Tofu crumbled finely
- 1 tbsp nutritional yeast
- 3 tbsp pizza sauce or tomato paste
- 1 tbsp BBQ sauce
- Vegeta powder to taste
- 1 tbsp olive oil
- 2 1/2 tsp paprika powder smoked is best
- 1 1/2 tsp salt
- 2 tsp lemon juice
Instructions
- Heat oil saute onion garlic and mushrooms til soften then process into paste
- In a bowl, mix the rest of the ingredients
- Preheat oven to 390 F
- Mix in mushroom paste into the bowl
