This is super good topped with guacamole, vegan sour cream or salsa. My husband loves his topped with jalapeno pickles.
In a bowl, mix:
3 c hot cooked brown rice
2 tbsp lime juice
A bunch of cilantro, chopped
Heat 1-2 tbsp olive oil and saute until soften:
1/2 of a large onion, thinly sliced
3 garlic, diced finely
1 bell pepper, diced
Stir in
1 can white bean, drain but don’t rinse
1 can peaches and cream corn kernels
A couple drops of habanero hot sauce
Vegeta powder to taste
2 generous pinches cumin
1/4 tsp cayenne powder (or more!)
Mix rice and beans and wrap!
(You can top with suggested above before wrapping)
Serve!
Brown Rice and White Bean Burrito
Ingredients

- 1 can white bean drain but don’t rinse
- 1 can peaches and cream corn kernels

Instructions
- Mix rice, lime juice, cilantro in a bowl
