This following recipe makes 2 thick omelettes, and enough for 4 thin omelettes (which would make much more similar results to the real omelette)!
You can make your own style of omelet obviously, using whatever veggies you like ?
1 c chickpea flour
1 tbsp nutritional yeast
1 tsp Vegeta powder
1/8 tsp x 2 BP
1/8 tsp x 2 kala namak
1 c water
1 bell pepper, diced
2 green onion, thinly sliced
1-2 garlic, minced
Filling:
1/2 of a small onion
A bunch of spinach, chopped
1 can sliced mushrooms, drain (fresh mushrooms work too)
Magi liquid seasoning to taste
1-2 tbsp olive oil for omelet
1 tbsp olive oil for filling
Heat a tbsp oil, saute onion until soften then stir in spinach and mushrooms. Season with Magi. Keep warm
Mix flour etc. Stir in water, then bell pepper green onion and garlic.
Heat oil, pour half of flour mixture and fry as you would do egg omelet.
Place on a plate and top with filling, fold in half.
Repeat step for the rest of the batter
Enjoy immediately.
Eggless Omelet
