We are expecting quite a few thunderstorm this week to next week, which is suck. Will be super hot most of the days, then thunderstorm most of late arvo to night. lol
I whinge a lot about weather hey, and I am from tropical country hahahah
My parents always encourage us to move to Australia or Singapore, so they can visit now and then. Canada is toooo far, but all I could think of is that am a weather snob now. Those countries are hot 😛 Now, Hawaii though, I won’t mind.
Anyways…today I have meatless taco recipe to share. I would rather call them wraps to be honest, unless when I use other type of crumbles instead red lentils.
Split red lentils are a tad softer compare to real ground beef, or meatless ground beef, kids would definitely protest saying it’s not taco, so I would call it wraps when I prepare it with red lentils.
This following dish does use meatless beef, but I still call them wraps 😛
Taco Meat
- 1 c dry red lentils (split)
- Enough water
How To
- Rinse, bring to boil, simmer and cook for 8-10 mins., drain
Taco
- 2 Gardein burgers
- 1/2 medium onion, diced
- 2 garlic, diced
- 2 tbsp olive oil
- Taco seasoning
- 1/4-1/2 c water
How To
- Heat oil, cook frozen burger 5 mins on each side
- Stir in onion and garlic, and crumble the burgers
- Stir in lentils, season with taco seasoning, add water if needed, cook for 8-10 mins
Guacamole (serves 6)
- 1/2 of medium onion, diced
- 1 garlic, minced
- 1 medium size tomato, chopped
- 1 heaping tbsp chopped cilantro
- 2 avocado
- Salt and lime/lemon juice to taste
How To
- Kinda mash avocado (we like it chunky in this house) and mix with the rest
To serve
- Soft flour tortilla
- Mixed salad
How To
- Lay tortilla on a plate
- Place salad, top with lentil and guacamole
- Wrap and enjoy!
Can be made spicy with chopped chili or jalapeno (for guacamole) or paprika/black pepper powder (into lentil). We have kiddies at home, so no spiciness for us 😸Thanks for looking!
