I actually wanted to make “bakso tahu jamur (tahu bakso)”, which is often found in a bowl of Indonesian meatballs and noodle soup. It is steamed puffed tofu that is normally filled with spiced ground beef paste. Mine is of course veganized, without the ground beef but mushrooms instead. However, I was running out of tofu puff, so I came up with the idea of rolling the mushroom paste in Nori sheet (roasted seaweed), hence the name shroom-weed (mushroom in seaweed) ?

(The tamarind soup is using spice pouch, available in many brands at Asian stores)
Bakso Tahu Jamur
1 bag of ready to use fried Tofu, make a cut on one side, to fill
10 dried shiitake mushrooms, soaked in hot boiling water for an hour, drain
1 red bell pepper, seeded
5 tbsp each flour and tapioca flour
1/3 c hot boiling water
Salt and black pepper
1 tsp garlic powder
2 tsp onion powder
1/4 tbsp Hungarian Vegeta powder
Into blender, process mushrooms and bell pepper
Mix in the rest of the ingredients
Fill into fried Tofu
Steam for 15 mins
Shroom-Weed (Mushrooms in Seaweeds)
6 boxes of individual cut seaweed/nori sheets
10 dried shiitake mushrooms, soaked in hot boiling water for an hour, drain
1 red bell pepper, seeded
5 tbsp each flour and tapioca flour
Salt black pepper to taste
1/4 tbsp Hungarian Vegeta powder
1 tsp garlic powder
2 tsp onion powder
1/3 c hot boiling water
2 tsp sesame oil
Into food processor, blend shiitake and bell pepper
Then mix in the rest of the ingredients
Place a tbsp mixture on seaweed and fold
Repeat until all mixture used up
Steam for 10-15 mins
Enjoy as is, with soy sauce and pickled ginger, sriracha, spicy peanut sauce, as side dish, etc
