I prepared some morning snack for my 2.5 yo son and he didn’t touch the apples. Since I didn’t want to waste it, I made muffins with them lol
Mix in a bowl:
2 c flour
1 c sugar (brown, coconut palm, regular white, whichever)
1 tsp BP
1 tsp baking soda
1 1/2 tsp allspice powder
A pinch or two salt
Pour in center and mix:
1 c thick coconut milk (I chilled it in fridge overnight – it was leftover for other cooking actually, and I wanted to use it up before it goes bad)
1/2 c puree pumpkin (also leftover from previous day dish)
1/4 c oil
2 tbsp aquafaba (leftover as well, I think without would still work. Am just using up whatever I have in the fridge)
1 tsp vanilla essence
Mix in:
1 apple, chopped
1 handful raisin
Steam for 20-25 mins

Ingredients

Instructions
- In a bowl, mix flour, sugar, BP, BS, allspice, salt.
- Make a well in center and pour in wet ingredients
- Fold in apple and raisin
- Steam for 20-25 mins
