Maybe next time I will try this on rice paper as well 🙂
Cooked quinoa (1 c dry in 1 1/4 c water)
1 yellow bell pepper
1 small purple onion, sliced thinly or diced
1 tsp minced garlic
1 bag frozen spinach, thawed, rinsed, squeezed
1 box firm Tofu, cubed
1-2 tbsp olive oil
2 red bird eye chilies, sliced
Magi seasoning to taste
Sesame oil to taste
Tortilla
Heat oil, saute onion garlic chilies
Stir in spinach, cook for 5-8 mins, covered, medium heat
Stir in bell pepper, cook for 5 mins
Add in quinoa and season with sesame oil and Magi
Wrap with tortilla and enjoy as is or with sriracha
