My boys love pancakes. Not just for breakfast but also lunch, dinner, snacks, basically whenever the mood strike them, they would ask for pancakes! And this can go for days, until the cook is out of ideas and bored making pancakes ๐๐๐๐๐
So yeah, I make pancakes often at home, my own style, American style, Indonesian style, and now the boys are in love with Korean style pancake, called Hoddeok (also known as Hotteok).
These pancakes are often filled with brown sugar and nuts, and best served warm so you would get the melting sugar syrup, which is oh so good.
Just look at it, soooo inviting no? ๐๐๐๐
This time I made using coconut palm sugar and walnut. But you can fill it with whatever you wish!!
1 1/4 c flour
1 tsp each active instant yeast and sugar
A pinch of salt
1/2 c lukewarm plant milk
Filling:
1/4 c coconut palm sugar
1/4 tsp cinnamon powder
2 heaping tbsp fine walnut meal
Mix the first ingredient and knead into a dough. Let rest, covered, for an H. Punch down and let rest again for another 20 mins.
Grease your hands with a little oil and divide dough into 4-6 portions. Flatten each and place a tsp filling and shape into balls, seam to seal.
Heat a nonstick pan and brush lightly with oil. Fry each ball by flattening it with your spatula, over medium heat for a minute long on each side (until golden brown), covered with lid
Serve immediately (watch out sugar filling is hot).
