Ever since we are starting to live veganish, I am trying many things that I did not really have any interests before. Like quinoa. Seen it often at the stores, but never really cooked them let alone buy them to cook. Now I stock them a lot in my pantry lol
1 1/2 c water
1 c quinoa
1/2 of a large purple Onion, sliced
3 garlic, sliced
2 tbsp olive oil
2 red bird eye chilies, sliced
Magi seasoning liquid as needed
250 g frozen brussel sprouts
1/4 c water
1/2 tbsp vegan margarine/butter
1/2 tsp sugar
A pinch of salt
1/2 tsp nutritional yeast
1 tsp corn starch
Cook quinoa in water to a boil, then simmer for 10-12 mins
Mix Brussel sprouts with water sugar salt yeast and starch in a bowl, stir then cover with cling wrap and poke a hole small hole or two, micro on high for 4 mins
Heat oil, saute onion garlic and chilies
Stir in Brussel sprouts and quinoa
Season with Magi
