Wild rice is supposedly super healthy, but my gosh, they are expensive 😀
1 c wild rice
1/2 – 1 bag of vegan sausage (like veggie dog from st Yves), sliced or cubed
3 c veggie broth
1 tsp Maggi seasoning liquid
1 large purple Onion, chopped
10 baby carrots, chopped
1/4 c olive oil
Enough hot boiling water
Soak rice in hot boiling water for 5 mins, drain
Place rice, Maggi and broth in a pot. Bring to boil, then simmer for 45 mins
Meanwhile heat oil and saute onion and carrots until tender. Stir in veggies dogs, set aside while waiting for rice to cook
Once rice is cooked (there might be some broth still, it’s fine), stir in onion mixture and reheat for 5-10 mins
