So delish with warm rice!
1/2 of a Cauliflower, slice the florets
2 large potatoes, skinned and cubed
1 can chickpeas, reserve the water for aquafaba if you wish
1 can coconut milk
1 c water/vegetable broth (I was just boiling soybeans so I used the water) -optional
Sugar and salt to taste
1-2 tbsp olive oil

7 cloves
1/2 of a nutmeg
2 black cardamoms
3 star anise
Run through food processor and sift
1 heaping tsp turmeric powder (or 1 1/2)
1 tsp store bought minced garlic
3-4 tsp store bought onion powder
1 cinnamon stick
2 tsp ground coriander
1 1/2 tsp ground cumin
Heat oil, saute spices, turmeric, cinnamon stick, coriander, cumin, garlic, onion powder
Stir in Cauliflower and potatoes
Pour in soybean water
Cook for 5 minutes, covered
Pour in coconut milk and chickpeas
Season with salt and sugar
Cook until potatoes tender
Curried Cauliflower
Ingredients

Instructions
- Run through spices (cloves, nutmeg, black cardamom, star anise) ingredients in a food processor and sift
- Heat oil, saute spices, turmeric, cinnamon stick, coriander, cumin, garlic, onion powder
- Stir in Cauliflower and potatoes
- Pour in soybean water
- Cook for 5 minutes, covered
- Pour in coconut milk and chickpeas
- Season with salt and sugar
- Cook until potatoes tender
