I make a lot of pancakes for the kids. Usually from 1 recipe I can make various kinds of pancakes just by adding this and that, or substituting this and that.
Pancake recipe(s) is most of the time versatile like that. Once you have a great basic recipe that you like, you can go from there and create amazing pancakes ?
This following recipe is one of pancake recipes I often make that the kids like. I most likely will post more (different obv.) pancake recipes in the future!
1 ripe banana, mashed
1 3/4 c almond milk
1/4 – 1/2 c corn oil
3 tbsp maple syrup
2 c flour
1 tbsp BP
2 tsp vanilla essence
1 tbsp unsweetened desiccated coconut (medium)
Blueberries for topping
Maple syrup for topping
Mix everything
Brush nonstick pan with vegan margarine
Pour batter and cook
Served topped with blueberries and more maple syrup
Enjoy!
This can also be waffle, if you like waffle better! Use sugar instead maple syrup in batter, and less oil

Ingredients
- 1 ripe banana mashed

Instructions
- Mix everything
- Brush nonstick pan with vegan margarine
- Pour batter and cook
