Today recipe is this awesome walnut cookies with nutmeg flavor that just meeeelt away when you bite them, definitely a party in the mouth 😉
My mother and oldest sister used to bake these Indonesian cookies called Putih Salju (white snow), although some would call them Putri Salju (snow princess a.k.a snow white) and they are using cashew, yum! Later I learned there are similar cookies in North America mostly used almond, and they are called Mexican Wedding Cookies, which happen to be Russia Tea Cake, and they are the same as Italian Wedding Cookies as well. While these cookies are all round, as snowballs, Indonesian versions are usually crescent shaped.
As I love those cookies very much, I made my own version, using walnuts hahaha Turned out pretty good as good as my mother’s and sister’s, although I didn’t shape them crescent but round, just like butter balls 😀
Ingredients
1 c unsalted butter, room temperature
1/2 c sugar
2 tsp vanilla essence
2 c flour
3/4 c ground walnut
2 whole eggs
1 c icing sugar
1 small size nutmeg
1/4 tsp fennel seeds
Method
- Process nutmeg and fennel into powder, mix with icing sugar, sift, set aside
- Cream butter, sugar, vanilla
Beat in flour a little at a time until combined
Stir in walnut, beat in eggs, then shape into balls by a tbsp
- Place on un-greased sheet and bake at preheated 300 F for 18-20 mins, cool on racks
- Once cookies are cooled, roll in sugar mixture
Soooo good, I can stuff my mouth with tons at a time 😛
