These Hungarian rum balls are perfect for any time snack during the day and even for midnight sweet tooth craving 🙂
These rum balls are great for party as well, just place them into mini cupcake liner and place nicely on your dessert table 🙂
250 g digestive cookies
50 g dried cherries, I love using the tart montmorency from Costco (or you can use raisins)
4 tbsp honey
1 tbsp cocoa powder
50 g butter
1L milk
4-5 tbsp peach/apricot jam
2 tbsp rum
50 g desiccated coconut, unsweetened
For rolling:
100-150 g desiccated coconut, unsweetened
Crush cookies to fine crumbs
Add in dry ingredients, mix well
Add in milk, honey, stir
Add in jam, rum and room temperature butter, stir to combine into paste
Roll into balls and chill for 1-2 H then roll into coconut OR you can shape into balls, roll into coconut, and chill
