Prepared this bread to be entered to instructables.com contest 😀 With or without the glaze, this bread is awesome. And if you spot eggnog on the market already, make the glaze with eggnog! SUPERB 🙂
1 c canned pumpkin puree
1/2 c butter/margarine (room temperature for butter)
2 eggs
1 c sugar
Dry Ingredients:
2 c flour
1 tsp baking soda
1 tsp cinnamon powder
1 tsp pumpkin pie spice (if not allspice works too!)
Addition:
1/2 c mini chocolate chip (either milk or dark)
1/2 c chopped walnut
Glaze:
1/2 c icing sugar
2-3 tsp milk/half and half/heavy cream/eggnog
Method:
In a bowl, mix dry ingredients , set aside
In a separate bowl, mix chocolate chips and chopped walnut, set aside
In another bowl, using a wire whisk, combine egg, sugar, margarine and pumpkin
Stir in dry ingredients followed with chocolate chip and walnut mixture
Spread batter evenly on a greased loaf pan and baked at preheated 350 F for 55 minutes (until knife inserted in center comes out clean)
Cool inside the pan for 10 mins, take out of pan and cool completely on rack (for about 2 h), before glazing
Mix icing sugar and milk, stir and drizzle on cooled bread
Let icing harden for 30 mins then slice
