Sometimes when am not so lazy, I mealprep for a week or two worth, for my son’s lunch box. These quiches are good for recess time 🙂
But of course, they are also good for finger food at your gathering or party, even for bake sale too 😀
1 1/2 c flour
1 tsp sugar
1/2 tsp salt
1/2 c oil
2 tbsp milk
Combine dry ingredients in a bowl, stir
Pour in oil and milk, mix to form a ball
Divide into 2 dozens small dough
Press each dough into mini cupcake pan
3 eggs
1 bunch of green onion, thinly sliced
salt, pepper, grated nutmeg, to taste
1/2 c each heavy cream and milk
a generous tbsp butter, melted
enough grated cheese
With wire whisk, beat eggs, seasonings, green onion
Stir in melted butter
Place grated cheese into prepared base
Pour egg mixture on top of cheese
Bake on preheated 350 F for 25 mins
Cool on rack
If you like Sriracha hot sauce, my gosh, you could finish a dozen by one sitting, so watch out ;-D
Super Easy Mini Quiche

- salt pepper, grated nutmeg, to taste
- 1/2 c each heavy cream and milk

- enough grated cheese
