These chocolate sticks are called Turo Rudi in Hungary. They are made of turos, which is Hungarian cottage cheese (farmer’s marker, instead American/Canadian cottage cheese), covered with melted chocolate.
Depending the brands, in Hungary you can find them filled with fruit preserves.
I love them so much, but we don’t get them here in Canada, so we always have to make them ourselves 😛
700 g soft curd cottage cheese, either homemade or store bought, press it through a mesh (to make it smoother and creamier
1 envelope vanilla sugar (at No Frills or Safeway)
1 lemon, grate the skin
10 g gelatin bloomed in 50 g water
5 tbsp icing sugar or you can also use berry sugar (superfine/castor)
1 box dark chocolate
Mix cheese with grated lemon zest and icing sugar well then add in bloomed gelatin, mix well
Chill mixture in the fridge for 30 minutes to an hour
Shape into logs with the help of plastic cling wrap and wrap individually and place them in the freezer for 15 minutes
Meanwhile, melt dark chocolate and pipe as long as your cheese sticks
Unwrap cheese sticks, place them on pipe chocolates then once chocolate harden, move them to cooling rack then pour chocolate on them, let chocolate set.
Enjoy chilled!
You can wrap them and gift them to friends, you can store the in the fridge for at least a week, you can freeze them, you can mold them instead shaping into sticks, and you can even fill them with your fav jam!
