My husband got me a Lebanese cooking book awhile back, and I gave a go on one of the recipes, which is blogged below.
These Lebanese potato pies are best served with cucumber salad (either made with yogurt or sour cream), however the recipe suggests stew dishes or fresh cold yogurt
Dough
2 c warm water
2 tbsp sugar
1 scant tbsp active dry (org: 1 package)
1/4 c corn oil (org: vegetable oil)
2 tsp salt
1 egg
5 c flour
Dissolve sugar and yeast in water, let bloom 5-10 mins
Add in the rest of the ingredients and knead
Brush with oil and cover
Let rise in warm place until doubled in size
Filling
8 large potatoes (mine werent big so I used about 12), shredded (but I grated them)
3/4 lbs ground beef (mine was 400g)
1 large onion, grated
1 1/2 tsp salt (I added a bit more)
1/2 tsp pepper (I used freshly ground black pepper)
1/4 tsp cinnamon (I assumed powder)
Soft butter for brushing
Mix all ingredients
Punch dough and roll
Cut into rounds
Place 1 heaping tbsp into each round and gather edges to shape triangles as shown
Place on greased cookie sheet (I just used parchment paper), bake in preheated 400 f for 20-25 mins
Brush with soft butter
