8 large potatoes, scrubbed, washed, patted dry and wrapped individually with aluminum foil
Filling
500 g ground beef
1/2 onion, chopped
1 tbsp corn oil
A bunch of green onion, thinly sliced
1 red paprika, cubed
Maggi liquid seasoning as needed
5 tbsp sour cream
1/2 pouch taco seasoning
Preheat oven 350, bake potatoes for 1 1/2 h until tender
Turn off, take out and let cool slightly
Prepare filling
Heat oil saute onion
Add in beef, cook well
Add in seasonings
Set aside
Potato Boat
Halved potatoes (watch out for they are still hot), spoon the potatoes leaving skin as boats, place potatoes into a bowl, mash
Mix in beef and veggies plus sour cream
Preheat oven 350
Fill boats with mixture
Place boats on baking sheet, cover with foil and bake for 20 mins
You can sprinkled boats with cheese and bake to melt
You can also top boats with the chili sauce leftover from Cilantro Chicken if you’d like
