2 c AP flour
2 c quick oatmeal
1 tsp BSoda
1 tsp BP
1 tsp salt
1 c sugar
3/4 c shortening (or butter flavor shortening)
2 beaten eggs
2 tsp vanilla essence
3 tbsp fancy molasses or 5 tbsp light molasses
1/2 c raisins (choc chips or nuts or combo would work superb too btw!)
Preheat oven 350 F
Combine dry ingredients
Cream sugar and shortening
Beat in eggs, vanilla, and molasses
Mix in dry ingredients, gradually
Stir in raisins
Using ice cream scoop, about 42 g each of batter, roll them to balls then flat them (you can also drop by teaspoonful)
Bake 10 mins, cool on sheet for 5 mins, then move them to rack
Soft Oatmeal Cookies
