I made this cheesecake for my husband’s birthday. I used a Hungarian style farmer’s cheese called turo, it is sometimes also known as cottage cheese, however the cottage cheese found in North America is very different from turo, so if you try this with regular cottage cheese, you might find a different kind of texture of cheesecake although I would say the flavor would still be the same.
For Base
- 4 eggs, separate
- 4 tbsp flour
- 4 tbsp sugar
- a pinch of baking soda
For Cheesecake
- 250 g turo (if not, German quark)
- 150 g icing sugar
- 2 tbsp sour cream
- 2 envelopes vanilla sugar (such as Dr. Oetker)
- grated of 1/2 lemon peel
- 2 dl heavy cream
- 1 handful raisins
- 1 dl water
- 1 envelope gelatin powder
For Topping
- Any kinds of fresh fruits you wish
- An envelope of tortazsele or express gelatin (such as from Dr. Oetker)
Directions
- Beat egg white til fluffy
- Beat the other ingredients (for base) to combine, then fold in egg white foam
- Bake on 350 F for 15–20 minutes, cool to room temperature before proceeding
- Beat cheesecake ingredients
- Bring to boil water and gelatin, cook til dissolved, cool to room temperature
- Beat heavy cream til fluffy
- Fold in gelatin, whipped cream into cheesecake mixture
- Sprinkle base with raisins then pour cheesecake mixture
- Chill in the fridge til set, at least 4-6 H
- Take out cheesecake from fridge, decorate with fresh fruits
- Prepare tortazsele as instructed on the package and pour over fruit, slice and serve!!

bahan dasar
4 butir telur, pisahkan
4 sdm tepung terigu
4 sdm gula pasir
sejumput baking soda/soda kue
bahan cheesecake
250 g keju cottage khas Hongaria (turo), tekstur dan rasa tidak sama dengan cottage cheese Amerika Utara ataupun quark/cottage cheesenya Jerman
150 g gula bubuk
2 sdm sour cream
2 bungkus gula vanila
parutan kulit jeruk lemon, 1/2 nya saja
2 dl krim kental
1 genggam penuh sultana
1 dl + 1 bungkus bubuk jelatin (cari yang halal)
pelengkap
buah-buahan segar sesuai selera, kalau di foto, saya pakai kiwi, mandarin sama ribizsli
agar-agar khusus buat lapisan buah
Cara Membuat
Kue: kocok putih telur hingga mengembang. Campur sisa bahan lainnya, kocok rata dan kental. Tuangkan putih telur, aduk rata perlahan hingga rata. Panggang hingga matang dalam loyang bongkar pasang, dinginkan pada suhu ruangan.
Hancurkan turo dengan sendok, campur bahan lainnya, aduk rata
Panaskan air dan jelatin, aduk hingga mencair, dinginkan
Kocok kaku krim kental
Tuang air jelatin pada turo, aduk rata. Masukkan kocokan krim, aduk rata
Taburi atas kue dengan sultana, tuang turo
Dinginkan pada kulkas hingga mengeras
Setelah mengeras, keluarkan dari kulkas
Masak agar-agar sesuai instruksi di bungkusnya
Tata buah, tuang agar-agar yang sudah agak dingin (agar-agar akan cepat mengeras setelah dituang)
Bisa langsung disajikan, ataupun didinginkan kembali sebentar di kulkas
