Found this following recipe on a PDF my husband’s mother collected.
I added GOOEY word to the original title of the recipe because the result wasn’t like the store-bought or bakery bought fudge. Mine were sticky even after chilling (I know that some people find this problem and I know some like it gooey when making peanut butter fudge, but I was expecting a more solid fudge).
Slicing is one thing to concern about because the chocolate cracked and it didn’t look good; but mainly, they were just too sticky and more to taffy instead fudge (although the taste was great) that I had tried. Most likely, omitting the peanut butter chips and adding more peanut butter could be the reason.
- 2 Tbs. butter
- 2/3 cups evaporated milk
- 1 2/3 cups sugar
- 1/2 tsp. salt
- 2 cups 4 oz miniature marshmallows
- 1 1/2 cups 1 1/2 – 6oz packages peanut butter chips (I didn’t use this)
- 1/2 cup peanut butter I used 1 heaping cup instead
- 1 tsp. vanilla
- 1 cup 6 oz chocolate chips (white chips instead)
Instructions
- Combine butter, evaporated milk, sugar, and salt in saucepan over medium
- heat, stirring occasionally. Bring to full boil. Cook 4-5 minutes, stirring constantly.
- Remove from heat. Stir in marshmallows, peanut butter chips, peanut butter, and
- vanilla. Stir vigorously for 1 minute, until marshmallows melt and blend. Pour into
- 8 inch square buttered pan. Cool.
- Melt chocolate chips; spread on fudge. Chill before serving.
I may not re-try the recipe since it is impossible to find peanut butter chips where I live and I don’t really want to fail for future trying; so my suggestion is, stick to the exact recipe and if you also fail when you already follow it exactly, let me know, so I can really stop wondering ?
