I actually wanted to make regular brownies (with butter and white all purpose flour) but saw that I still had tons of whole wheat flour. Since usually cake with whole wheat flour has certain texture and taste and density, I decided to use oil and added two differ kinds of extracts (remembering I had almond slices).
As I had a ripened banana left, I just added it into the batter and hoped it would come out great, and it did
This is very BEST served warm.
1/3 + 1/3 cup vegetable oil
3 eggs
1 1/2 cup sugar
1 ripe banana
2 heaping tsp vanilla extract
1 heaping tsp almond extract
1 cup cocoa powder
1 cup whole wheat flour
2 tsp baking powder
almond slices, as needed
Heat oven to 325 F
Beat oil and egg in a medium speed for 1-2 minutes
Add in extracts and beat again
Then add in 1 cup sugar bits by bits; at this stage, mixture will be slightly thicken and oven heat is ready; so turn off the oven and keep the door closed
Add in cocoa powder into the mixture bits by bits and keep beating until well blended
Then add in the baking powder and keep beating
Pour in the last 1/2 cup sugar and beat well
Then add in mashed banana and keep beating
Lastly, add in flour little by little; mixture will be thicken even more. This is when you turn on the oven again.
Beat mixture until very well blended.
Pour batter onto a baking sheet of 8 or 9 inch that already lined with parchment paper or aluminum foil. Sprinkle top with almond slices.
When the oven is ready again, bake cake for 25 minutes
Slice to serve
