Great in this cold winter! – but also since my husband is doing keto, so this is his dinner hahah You can serve this stir fry as is or with low (zero) carb noodles 🙂
2 chipotle chilies
450 g white button mushrooms, skinned
4 tbsp oil
1 onion, chopped
2 garlic, crushed/minced
fresh coriander for garnish
Method
Soak chilies in hot water for 10 mins, drain and cut off the stalks
Slit chilies and scope out the seeds then chop nicely
Trim mushrooms and clean them (if they are huge, cut them in half, otherwise leave them as is)
Heat oil, add onion, garlic, chilies and mushrooms
Stir fry for 6-8 minutes, coating evenly until onion is tender
Spoon into plate and garnish with coriander
Note: you can also chop some coriander and mix with mushroom at the very end
