It is amusing that Canadian Thanksgiving is on the same month as Halloween. I cannot let go Thanksgiving, but it is so close to Halloween already lol So, yeah, decorating my muffins and cupcakes as both 😛
Chocolate Cupcakes:
1 envelope Dr. Oetker chocolate cake mix (the rest of the ingredients stated on the back of the envelope)
Mixed Peel Muffins:
2 cups whole wheat flour
2 tsps baking powder
dash of salt
2 handfuls of Australian mixed peel (well don\’t have to be Australian; mine were Australian as my Mum sent me some
1 egg
1/4 cup vegetable oil
1/2 cup molasses
1 cup cold milk
1/2 cup cold water
Decoration:
1 tin storebought chocolate frosting (454 g; I used Compliments)
Corn candies as needed (for turkey decorations)
Oval size cookies as needed (for turkey decorations)
Red and brown (or black) Cake Mate Scribbles (for turkey decorations)
Ghost-shaped marshmallows as needed (and/or other shapes)
Cupcakes:
Grease and flour pan
Mix ingredients as instructed; pour 3 tbsps for each round of cupcake/muffin cup (makes 10).
Bake at preheated 350 F for 20 minutes
Cool before frosting and decorating (please see picture)
Muffins:
Combine dry ingredients in a bowl. In a separate bowl, combine wet ingredients. Fold wet and dry ingredients together quickly, just until flour is moistened.
Spoon about 3 1/2 tbsps of batter into greased and floured muffin tins (makes 10 as well).
Bake at preheated 400 F for 20 minutes.
Cool before frosting and decorating (please see picture)
Turkey Decoration:
Place corn candies upside down sticking into the frosted cupcakes/muffins for the tail feathers of the turkey.
Place oval cookies as head and wings.
Break the white tip of the corn candies and place as noses.
With the red and brown scribbles, make the eyes and the snoods
