This is my go to fruitcake recipe. It’s so simple and pretty delish. Give a try if you’d like to, and see if you like it as well 😀

8-12 tbsps mixed candied fruits
2 tbsps softened butter
6 tbsps margarine
2 eggs
2 tbsps + 1/4 tsp light rum essence
2 heaping tbsps cream for coffee
2 heaping tbsps honey
1/2 cup sugar
1 1/2 cups all purpose flour
1/2 tsp baking powder
Preheat oven to 350 F.
Mix flour and baking powder, set aside.
In a large bowl, cream the butter and margarine with the sugar and honey. Beat in the eggs, then the coffee cream and rum essence. Beat in the mixture of flour gradually. Stir in the mixed fruits.
Pour batter into a greased and floured baking pan (if it’s non silicone pan/mold, flour it, but if it’s silicone, you don’t need to flour it but just grease it).
Bake for 10 minutes; lower the heat to 325 F, then bake for another 30-40 minutes or until knife inserted comes out clean
