In Indonesia, it is more common to use specific cooking pan for this Indonesian mud cakes, and are cooked on top of stove rather than baked in the oven.
500 grams mashed potatoes
450 ml milk
1 scant tbsp vanilla extract
16 tbsps sugar
14 tbsps all purpose flour
3 tbsps margarine
4 eggs
raisins for topping
Melt margarine in low-medium heat, add in flour, add in mashed potatoes bits by bits, stir well.
Add in milk bits by bits, stir well, then add in vanilla extract, stir well. Turn off heat, stir to cool.
When the potato mixture has cooled down, add in 4 eggs, stir well.
Grease muffin tins, pour batterm top each with raisins; preheat oven to 325 F, bake for 25 minutes.
Wait until mud cake completely cooled before taking out of the muffin tins to serving plate.
This recipe is also wonderful using pumpkin puree.
