These are soft, not that chewy, not too sweet, spiced, potato cookies.
When you bite it, you will taste the raisins and choc chip. On top, some are sprinkled with granulated sugar, some more are with icing sugar. It’s really good ^_^
6 small-medium potatoes
1 handful raisins and 1 generous handful chocolate chips
4-5 tbsp milk
icing sugar for dusting
1 egg
4 tbsp margarine/butter
1 cup all purpose flour
2 tsp baking powder
2-3 heaping tbsp molasses
2 heaping tsp all spice
Method:
Peel, wash, boil the potatoes, when it’s done, preheat oven to 375 degrees F.
Drain potatoes, add milk and margarine to potatoes and mash well. Stir in the remaining ingredients.
Drop by spoon-full or shape with cookie cutter, place on a greased baking sheet, or ungreased aluminum paper and bake for 10-15 minutes.
Sprinkle with granulated sugar before or after baking the cookies OR sprinkle with icing sugar.
