Made cupcakes yesterday and damn, I think I am in love with cupcakes better than regular cake….why, you asked? Because I get to cheat hahahah I can eat one, two, three cupcakes (yeah am a pig :P), thinking they are SMALLER size than a cake 😛
1 envelope Dr. Oetker Added Touch cake mix (white)
chocolate rice (preferably Indonesian such as Ceres or Ritz)
3 tbsps vegetable oil
cherry (optional)
3 tbsps Amarula cream
1 tbsps cold water
strawberry jam, as needed
1 1/2 cups whipping cream
4-5 tbsps icing sugar
1/4 cups Amarula cream (or more for stronger taste)
Cake:
Bake cake as instructed on the package, once done let cool for 5-10 minutes.
Make a small-medium hole on the middle part of the cupcakes,
Scoop the middle part of the cupcakes but don’t throw away what has been scooped out, fill in with strawberry jam, place back the portion that was taken out, set aside.
Cream:
With mixer, make whipped cream from the whipping cream, add in Amarula cream and icing sugar.
To Assemble:
Cover the top of the filled cupcakes with whipped cream, sprinkle chocolate rice and top with cherry
