Yes, there are three kinds of people in this world, lover of durian, hater of durian, and people who has slow internet connection ????
Durian is a very sweet fruit that is super pungent, native to South East Asian countries. It’s skin are spiky sharp and it’s flesh is like custard to some. To those who aren’t accustomed to it though, the smell remind them of leaking gas, so they couldn’t bring themselves to enjoy it much, not even to stand in the same room as the fruit?
These following squares are using durian JAM, so no need that noseclip, jeez! ?
Joking aside, these squares are wonderful and I so would like you to give them a try should you find durian jam (online or at Asian stores), you might change your mind about the stinky fruit ?
Base
- 6 tbsp margarine
- 4 tbsp sugar
- 1 c AP flour
Filling
- 1 jar of durian jam such as Marisa brand
Topping
- 1 egg
- 5 tbsp sugar
- 8 tbsp unsweetened desiccated coconut
How To
- Base: mix everything and chill in the fridge for 30 mins.
- Preheat oven to 350 F
- Pat base on square pan that is lined with greased aluminum foil. Bake for 12-15 mins
- Meanwhile mix topping ingredients in a pot and cook on medium heat until thickened, stirring occasionally making sure mixture doesn’t get to boil
- Take out base from the oven and spread durian jam evenly, and top with coconut topping
- Bake at 400 F for 5-7 mins (until coconut is golden brown
- Immediately slice into squares but leave to cool completely before removing from the pan.
