My husband is leaving for Hungary to visit his father. Sadly my father in law is not in a great health, so this could be my husband’s last time seeing his father.
Today I am sharing you these no-bake cookies that I made for my father in law. They are coconut based and yes, they will be traveling on the plane with my husband 🙂
Super simple and easy to make and the plus side is, you don’t have to turn on the oven 😀 Pretty handy for summer!
Ingredients
- 1 1/2 cups of sugar
- a pinch of salt
- 1/2 cup of milk
- 1/2 cup vegetable shortening
- 3 cups quick oatmeal (I use Quaker)
- 3 tbsp chocolate milk drink powder (I use No Name, you can use Ovaltine, Milo, Nesquick, whichever you like!)
- 1 tbsp cocoa powder, unsweetened
- 1 cup sweetened coconut, desiccated
- 1 tsp vanilla extract
Method
- Put sugar, milk and shortening in a pan and bring to a rolling boil.
- Remove from heat.
- Add remaining ingredients and mix well. Drop by spoonfuls onto greased cookie sheet.
- Chill for less than 10 minutes, sweets are ready !
No-Bake Coconut Sweets
