I like this with rice, obviously, however, my husband prefers it with coleslaw only 😀
2 chicken breast, skinned, boned
1 tbsp fresh lime juice
1 green onion, thinly sliced
1 1/2 tbsp crushed pineapple
1 1/2 tbsp ketchup
1 1/2 tsp hot pepper sauce (I used Grace)
1 ripe tomato
1 garlic clove
1/4 cm ginger, skinned
1 tsp ground black pepper
salt and sugar to taste
Wash clean the chicken then slash at intervals using knife, place in a baking dish
Preheat oven to 400 F
Using food processor, mix tomato, ginger and clove, then place the mixture into a bowl.
Add sliced green onion, crushed pineapple, lime juice, ketchup, salt
and sugar, plus ground black pepper into the bowl, mix well
Pour mixture onto the chicken. Bake for 30 minutes, uncovered
