I have this super nice ginger soup that can be served with any kinds of noodles (preferably) and/or pasta.
Today I used fettuccine as I have to do grocery shopping, read: my pantry is empty hahahaha
This soup is obviously best to serve while still hot/warm!
To make this fettuccine with ginger soup, all you need:
- 3 tablespoons of oil for fettuccine
- Fettuccine or any other long pasta OR can be substitute with instant noodle, rice stick, bee-hoon, or any Chinese noodles
- water for fettuccine
- 2 green onion
- lime
- seasoning, salt and pepper to taste
- 1 1/2 chicken bouillon
- 1 1/2 liter of water for the soup
- 5 chicken neck, skinless, washed
- 4 cm ginger, peeled and crushed
- 2-3 chicken breast, skinless and boneless, washed, cut cubes
- 2 chicken wieners, slice thinly, set aside
- 2 tablespoons of oil
- 2 cloves of garlic, crushed; 1 medium onion, chopped
- garlic salt and sugar to taste
- 1-2 tsp light soy sauce; 2 tbsp sweet soy sauce, 2-3 tsp oyster sauce
Method
- Bring chicken neck to boil, add some salt and pepper to taste. Also add the chicken bouillon and a little bit of seasoning/MSG to taste.
- Meanwhile, in another pan, bring water to a boil, add oil and salt, and cook fettucini until tender (cooked). Drain, place on a serving plate
- While waiting for fettuccine, saute crushed garlic and chopped onion. Add in sliced green onion (1). Add in chicken cubes and cook until chicken turn in color (white), add in sliced wieners.
- Add in soy sauce, sweet soy sauce, and oyster sauce then garlic salt and sugar to taste
Serving suggestion: pour soup in a bowl, garnish with sliced green onion and sliced of lime. Place few tablespoons of cooked chicken on top of the cooked fettuccine. (As shown in the picture) – then pour the soup into the pasta bowl.
