Another trial of just putting everything I found in the kitchen, and I came with these cupcakes, they turned out to be nice and sweet.
1/2 teaspoon ground ginger (or 2 cm fresh grated ginger)
2 teaspoons baking powder
1/2 teaspoon salt
1 teaspoon ground cinnamon
1 1/2 cups flour2-3 full tablespoons of crunchy peanut butter
1/2 cup sugar
1/2 cup vegetable oil
1 egg, beaten
1/2 + 1/3 cup milk
Topping:
1/2 cup semi chocolate chips
1 tablespoons of sugar
1 teaspoon of cinnamon
unsalted margarine
Mix flour, sugar, baking powder, salt, cinnamon and ginger.
Mix the egg, milk and oil in another bowl, then stir into the dry ingredients to moisten.
Add in the crunchy peanut butter, stir well.
Spoon into greased or paper lined muffin cups.
Bake at 400 degrees for 20 minutes or until done.
For topping:
Combine the sugar and cinnamon. Brush the tops of the warm muffins with margarine and dip the top of muffin into sugar/cinnamon mixture.
Melt 1/2 cup of semi chocolate chips by steaming it. Dip the top of the cupcakes into the melted chocolate chips.
