This spicy Indonesian food is originally from Manado, North Sulawesi. While the Indonesians would usually grill the chicken using charcoal fire, this recipe is using oven.
To Blend (paste)
13 curly type chilies (obviously I used regular chilies as I couldn’t find curly chilies in Canada, but if you’re in Indonesia and have access to them, please use curly chilies 🙂
7 garlic
4 shallots
2 cm ginger
1/2 teaspoon Terasi (Indonesian hard shrimp paste)/Belachan
1 lemon grass
3-4 lime kaffir lime leaves
salt, sugar and MSG (if desired) to taste
Spread evenly the fresh lime juice and a bit of salt all over the chicken, leave it for 30 minutes.
Cut the chicken into 5-8 portions; wash clean then grill the chicken for about 15 minutes only.
Using a blender or mortar, mix well the “To Blend” ingredients.
Saute the blended ingredients until it produces nice scent, then add tomato, water, salt, then the chicken. Cook until all ingredients absorbed into the chicken meat.
Grill chicken in the oven again until well done and turn to golden brown color. (150 C)
Note:
Add in more chili into the blender if you wish hotter taste.
When you can not find broiler chicken, you can use chicken pieces, no need to be whole chicken, you can buy only thighs, breasts with bones, and such.
Ayam Bakar Rica
Ingredients

Bahan:
1 ekor ayam (kampung), potong menjadi 5-8 bagian
3 sdm air jeruk nipis
200 gram tomat merah, cincang kasar
50 ml air
3 sdm minyak untuk menumis
garam secukupnya
Haluskan:
13 buah cabai merah keriting atau lebih jika ingin lebih pedas
7 siung bawang putih
4 buah bawang merah (yang agak besar)
2 cm jahe
½ sdt terasi
1 batang sereh
3-4 lembar daun jeruk purut>
garam, gula, vetsin secukupnya
Cara Membuat:
Lumuri ayam dengan air jeruk nipis dan sedikit garam,
sisihkan kurang lebih 30 menit
Masak ayam di dalam oven selama 15 menit, tidak lebih.
Panaskan minyak, tumis bumbu yang dihaluskan sampai harum,
masukkan tomat, air, garam, gula, vetsin dan ayam
Masak hingga bumbu meresap lalu panggang ayam dalam oven sampai matang
dan bewarna kecoklatan. Angkat, sajikan
