Preheat oven to 375 degrees. In a medium bowl, combine flour, oats,bakingsoda, ginger, and salt. Mix well.
In a large mixing bowl, using anelectric mixer set on medium speed, beat together sugar and margarine
untillight and fluffy. Beat in banana, cream cheese, egg, and rumextract. Atlow speed, gradually beat in flour mixture until blended. Roll doughinto1-inch balls. Place coconut in a shallow bowl. Roll balls incoconut.
Place cookies, 1 1/2 inches apart, on 2 ungreased baking sheets.
Bake, inbatches, until golden, about 10 minutes. Place baking sheets on wireracksand cool slightly. Transfer cookies to racks and cool completely.
Variation: Substitute 1/2 cup of unsweetened applesauce for the
mashedbanana. Proceed as recipe directs.
Cooking Tips: Use a very ripe, soft banana for best results. Mash thebanana until it is completely smooth to ensure it will be evenlydispersed throughout the dough.
